Small fondant chocolate cakes
- 100g of bitter chocolate
- 100g of butter
- 90g of sugar
- 45g of flour
- 3 egg whites and yolks
- 1 vanilla pod
Preheat oven to 190°c.
Melt the chocolate and butter.
Whip together by hand egg whites, yolks and sugar for 5 minutes.
Add in the chocolate and the butter, the flour and the vanilla from the pod.
Pour into the mould.
Bake 8 minutes in the oven.
At the start of the seventh minute, take a moelleux cake out of the mould to see if the crust is baked enough and not to brittle.
If it is under-baked, continue for another minute.
Take out of the moulds as soon as baking is done, sprinkle ligthly with powered sugar and cocoa powder.
Eat while still warm. The fondant cake should be liquid in the centre.
